    Homemade granola

    • 5 cups oatmeal in shallow baking pan (I use the bottom of my broiler pan)
    • 2/3 cup peanut butter with 2/3 cup honey
    • 1 t. vanilla heated on stove Mix peanut butter mixture into oatmeal - it will be clumpy.
    • Bake for 5 minutes at 350 degrees and stir, bake for 5 minutes more - it's finished!
    • Let cool and harden. I store ours in mason jars. Makes about 2 quarts! I eat it most mornings for breakfast and I like it much better than the commercial stuff.

    Salsa chicken

    • Put as many chicken breasts as your family eats in crock pot.
    • Cover with onion, salsa to taste, 1 can corn
    • 1 can black beans, 1 T. cumin, 1 T. garlic powder
    • 1 T. chili powder
    • Cover and cook on high (or low) depending on your needs...
    • When chicken is finished, shred and serve on tortillas! We use non fat plain Greek yogurt for topping and cheddar, etc. We also love avocado on it when we have any...
